Recipe: Fluffy Pancake Stack

This Pancake Day, make our family-friendly easy peasy pancake recipe, courtesy of Group Development Chef, Neal Jepson. When it comes to toppings, get inspired by the team and their favourites.

Pancake Ingredients

100g plain flour

2 large eggs

300ml milk

Method

  1. Sift the flour into a mixing bowl
  2. Mix in the eggs and milk to make a smooth batter
  3. Leave to rest for 30 minutes if possible
  4. Grease a pan and ladle in the mixture
  5. Cook the pancakes for about a minute, or until the underside is golden brown and the top is bubbling
  6. Turn the pancakes over using a palette knife and cook for another minute
  7. Serve with the topping(s) of your choice

Neal’s Top Tip

When you grease the pan, use some kitchen paper, dab it into the oil and then carefully wipe the pan, you don’t need a lot of oil.
