Recipe: Butternut Squash Soup

We all know how important it is to fuel your day, and nothing does it better (or cosier!) than a hearty bowl of soup. At New Park Manor, our butternut squash soup is a firm favourite, especially as the weather cools down and we head into Halloween season. Head Chef,  Neal is excited to share this simple yet delicious recipe that you can whip up and enjoy all week long. Packed with flavour and perfect for batch cooking, this soup is sure to warm your heart. Get ready to dive into a bowl of comfort with our tasty butternut squash soup!

Roasted Butternut Squash Soup Recipe

Ingredients (Serves 8)

1 Butternut Squash

2 Carrots

1 Clove of Garlic

4tbsp Olive Oil

1 Large White Onion

1.5l Vegetable Stock

1tbsp Thyme

Dhakka Spice

Method

  1. Wash the squash, top and tail the squash, cut in half and remove the seeds. 
  2. Cut the squash into 1" pieces and place in baking tray. Add the olive oil, thyme and garlic, and roast until the flesh is soft.
  3. Whilst that is roasting, in a large pan sweat down the carrots and onions until soft slightly coloured.
  4. When ready add all the squash and liquor to the pan and add the stock powder and just enough water to cover. Allow to simmer for 15 minutes.
  5. Blitz using blender, and pass through a sieve. Serve and season with Dhakka.
